Pecan Pie is wonderful any time of year! And so is bread pudding!  What if the the stars aligned and you could have the best of both worlds? Well, check this out!  You can!  Try this recipe that Grammy recently made.  OH MY GOODNESS!  So good!  Papa said it was the best he’s had!  If Papa says it’s tasty, rule of thumb is, you need to believe it’s tasty!  Definitely a keeper for your recipe book!

Pecan Pie Bread Pudding

1 loaf “day old” French bread
3 ½ cups milk
4 eggs, lightly beaten
1 cup granulated sugar
2 Tablespoons vanilla
1/8 teaspoon salt
½ cup butter, softened
½ - ¾ cup dark brown sugar
1 ½ cup chopped Calianna pecans or Calianna pecan pieces
¼ cup chopped raisins (optional)
1/3 cup coconut (optional)

Preheat oven to 375 degrees F.  Cube bread and place in large bowl with 3 cups of milk.  In a second bowl, combine eggs, ½ cup milk, sugar, salt, and vanilla with whisk.  Pour over cubed bread and allow to sit for 15 minutes to absorb the milk.  In another bowl use a fork to combine softened butter and dark brown sugar until a “wet sand” consistency.  Add the pecans pieces.  Pour bread mixture into a buttered 9x13 pan.  Top with pecan mixture.  Bake for 45-55 minutes or until the center is slightly wiggly.
